The evening opens with a Stone Fruit Symphony of wood kissed peaches, apricots, and nectarines over tender greens, finished with whipped goat cheese and a champagne and wildflower honey vinaigrette. The main course is a fire seared beef short rib, slowly braised over hardwood embers in red wine and wildflower honey, finished with a glossy blackberry demi glace atop a silky celery root and Yukon Gold purée.
